Can one dish have a different price per outlet?

Yes. The dish is defined once; each outlet carries its own price and availability for it.

Do modifiers work for delivery apps too?

The same modifier groups feed the aggregator menus, so a choose-two-of-five works on the app the way it does at the till.

Do we have to type the menu in?

No. Menu items import from a CSV template, and only people with the menu and price permissions can run the import.
