Module 28 · Owner and finance

Your own profit, your own cash, your own margin, by month and by outlet.

Your own profit and loss, your own cash, your own margins, month by month and outlet by outlet, built from the orders and the spend already in the system.

In numbers

P&L, cashflow and profitability, counted.

3

tabs

The profit and loss, the cash that moved, and the margin per outlet, over one month and one outlet picker.
60

days

Commitments ahead are split into what is overdue and what falls due in the next sixty days.
2

exports

The profit and loss and the cashflow each go out as Line and Amount in AED, named for the month.

What is in it

P&L, cashflow and profitability, feature by feature.

DEWA and gas meters, rent with its Ejari number and the rest of the outlet costs feed it directly, so a Dubai outlet's real overheads are in the margin.

One month, one outlet or all

A month picker and an outlet picker over all three tabs, with All outlets as the first choice.

What is still owed

Supplier bills due this month, and commitments split into overdue and the next sixty days.

Gross profit, then operating profit

Revenue ex-VAT, discounts, aggregator commissions, food cost and wastage to gross profit; staff costs, rent, DEWA, chiller, gas, internet and telephone, compliance and maintenance to operating profit.

Cash in and cash out

Receipts by tender with each one’s settlement note, aggregator payouts and catering receipts on one side; the bills, rent cheques cleared and payroll paid on the other.

A VAT indication, not a return

Output VAT on sales and input VAT on expenses give a quarter’s indication. It is a figure to look at, never a filed return.

Margin side by side

Revenue, gross margin, operating profit and operating margin per outlet, plus revenue and cost per order and per cover, and a break-even that states its own assumptions.

Out to CSV

The P&L and the cashflow each export as Line and Amount (AED), named for the month.

Staff costs, marked honestly

Until a payroll run exists for the month the line reads as an estimate, so nobody reads a guess as a fact.

Plan the month

Drag sales, food cost and staff to see the month’s profit and break-even, roll it forward twelve months, and see when an outlet pays back what it cost to open. Franchise fees count as a share of sales, not a fixed cost.

Questions it answers

The four you will ask it first.

  • What did this outlet actually make last month, after everything?
  • How much cash came in, and how much went back out before it was ours?
  • Which outlet earns its rent, and which one only turns over?
  • What does a cover have to be worth for this place to break even?

Before you believe it

The two questions everyone asks.

Is the VAT line a return?

No. It is an indication for the quarter from your own sales and expenses, to look at before your accountant files. It is never presented as a filed return.

Where do the staff costs come from?

From the payroll run for that month. Until one exists the line is marked as an estimate rather than shown as a fact.
